5-Minute Lunch Idea: Asian Veggie Wraps

The other afternoon, I was on a Zoom call with one of my advisors discussing my study abroad plans for next year. The conversation was going great - that is, until it happened. I was asking her a question when, mid-sentence, my stomach suddenly growled. Loudly. As in, "I had to stop talking because I couldn't believe that sound came from me" kind of loud. It was mortifying. The advisor was extremely nice about the whole situation, but it's suffice to say that my face was beet red for the remainder of our conversation.
Why am I telling you this? It's certainly not because the story makes me look good, nor is it a memory that I particularly like reliving. No, the reason I'm sharing this fairly humiliating experience is because I believe that it's a fairly realistic depiction of most people's everyday lunch situation. It's the middle of the day, and chances are you've been attending class all morning, or talking with clients on-calls, or responding to your overflowing inbox of emails, and this is your first real break all day so your stomach is physically screaming at you "FEED ME, FEED ME NOW!" Which also means that you're likely not looking to spend another 30 minutes waiting for your meal to cook while you stare impatiently at the oven. And don't get me wrong, meal prep is great, but sometimes life just gets super busy and we need something quick and easy to make at 1:00 pm on a given Tuesday. Insert your new favorite, 5-minute lunch: Asian veggie wraps.
This meal is super convenient and easily customizable depending on your dietary restrictions and the ingredients you have on-hand. I made this version vegetarian, but it would also be amazing with chicken, tuna, or any other protein you have readily available to you. To balance out the plate, I love adding some freshly cut fruit and crackers or veggies on the side.
Ingredients:
Large tortilla of choice (I recommend looking for one higher in fiber to help keep you full for longer)
Veggie burger
Asian-chopped salad kit + dressing
Edamame beans
First, heat up your veggie burger in the microwave according to your package's instructions, then place it on top of a large plate or bowl. Chop up the veggie burger into bite-sized pieces, then pour in your salad mixture and the edamame beans. Toss the salad and veggie burger (or other protein of choice) in the dressing. Next, place your tortilla in the microwave for 20-30 seconds until warm. Place the salad mixture on top of the warmed tortilla, then wrap it up and cut it in half. Enjoy! :)
